Growing up, we would take advantage of bagging a few non game animals on the farm to fix up for supper because we did not even have a pair of nickels to scratch together, but your trusty bow and arrow can be used over and over several times.

According to this Texas Parks and Wildlife article, there are actually a lot more than 11 animals you can hunt year round, but that is because of the separate varieties that some of these species have. You must have a valid license to hunt, and also check with TP&W to make sure you are clear on any special restrictions that may be in place locally.
I will acknowledge that some of these animals are considered a nuisance, and that helps keep their season open around the calendar. However, even though the Lone Star State has more species of snakes than any other in the country, not one snake is on the open season list.
