At a Houston ice cream shop, Red Circle Ice Cream, this unusual treat that is making a comeback during peak crawfish season, and yes, it’s exactly what it sounds like.

But, it's not just ice cream served with a crawfish on top.
According to WAFB, the dessert starts with an ice cream base that Red Circle infuses with butter, garlic, Cajun seasoning, and real crawfish flavor. Then, for presentation a whole cooked crawfish is placed right on top of the scoop.
How Crawfish Ice Cream Is Made
Red Circle Ice Cream cooks down the blend of butter, spices, and crawfish, extracting the crawfish boil flavor before mixing it into the cream base. Once it's churned, it creates an ice cream that is still sweet, but also has a crawfish kick.
If I'm being honest, I'd really like to try this. As we know in Acadiana, taking some risks with recipes often leads to great things. Once I put crawfish boil into my pot of boiling bratwursts and they came out delicious.
