Following months of guessing on social media, Hillsboro is officially set to welcome a brand-new Waffle House location. City officials verified that the popular 24-hour restaurant chain will launch its grand opening on Monday, August 17. The milestone represents a major step forward in the city's broader strategy to repurpose and revitalize the property where a former outlet mall once stood.

The Old Hillsboro Outlet Mall Gets A Glow-Up

The commercial site, which underwent full demolition in 2025 after sitting empty for years, is being transformed through a partnership between the city and real estate firm Glaser Retail Partners. The Point at Hillsboro is designed to accommodate a combination of businesses that range from retail to restaurants. Local residents are excited about the new job opportunities.

Expanding Dining Options Across Central Texas

The arrival of Waffle House marks the debut of one of the first major national dining brands at the redeveloped property. Upon its opening, the Hillsboro site will hold the unique distinction of operating as the sole Waffle House location along the Central Texas I-35 corridor. That distinction will be short lived. The City of Waco says the iconic diner chain is completing plans for its first restaurant in their city.

Hillsboro’s commercial rebirth extends beyond the Waffle House. Adding to the expanding list of fast-food choices along the corridor, a new Panda Express is also scheduled to open at the same complex on August 20, just three days after Waffle House serves its first customers.
