Huntington will soon be home to a new eatery.

Simple Simon's Pizza will be opening in several weeks in Red Devil country.  I had a chance to track down the owners of this new restaurant and thoroughly enjoyed my conversation with them.

Introducing The Owners

Meet Clarke and Grace Tichy (pictured above).  She is a lifelong resident of the Lufkin area while Clarke, originally from Arkansas, moved to the East Texas area around 5 years ago. They have been married for about two years and they are expecting their first child, a boy, in less than a week from this posting. Wow! Their first baby and opening a new restaurant, I believe they like a good challenge.

Clarke and Grace are also the owners of Farmhouse Frozen Yogurt which is located on the west side of Lufkin off Loop 287.  They own two other of these yogurt shops in Bryan/College Station.

When Will it Open?

The target date is March 1. Clarke said that there is a possibility of a February opening, but, weather and supply issues could alter that. Once open, their business hours will be:

  • Sunday through Thursday: 11 a.m. - 9 p.m.
  • Friday and Saturday: 11 a.m. - 10 p.m.

Simple Simon's Pizza will be at the intersection of Highway 69 and Main Street in Huntington, across the street from Brookshire Brothers. They will be offering drive thru and carry out services.  Delivery via major food delivery companies will be offered in the future.

Why Huntington?

In our conversation, Clarke mentioned that he loves the people and the area around Huntington.  Even though Lufkin is less than a 10 minute drive, Huntington has kept its small-town identity. He believes that the population of Huntington as well as motorists along the busy Highway 69 corridor will make for good business for Simple Simon's.

The Menu

Well, of course...pizza.  But that's just the beginning.

The pizza variety is fantastic.  Plus, they serve stromboli and calizone (spelled with an 'i' on purpose).  Also on the menu are wings, breadsticks, sandwiches, pizzadilla (think pizza quesadilla), and they even do desserts such as cookie cakes.

I've eaten at Simple Simon's Pizza in Hudson many times (different owners, but they're all friends). Everything they serve is great but my favorites are the Big 10 Pizza, Calizones and you've got to try the Alpine Breadsticks!
